Happy Hunting!

I hope all the hunters out there good luck this morning. I hope all of you woke up and had a great breakfast! In my house I am the one who makes the breakfast in the morning. Sad to say that I couldn't go out hunting this morning since I'm up at school. But good luck to my Dad and brother Brian.

Hunting is a great way to get food for your home. And in the end very inexpensive. (depending on where you take your deer to get done) Normally we can find someone who is still doing them for a reasonable price. My favorite meat is venison!! Hopefully my Dad will get a deer and I will get a little meat from it!

This morning in honor of my family going out hunting made a breakfast that I would have made for them. This seriously took only 5 minutes (and is super easy) and now I'm off to a good day.

Ingredients: (serves 1)

2 scrambled eggs
about 2 Tablespoons of Salsa
1 slice of cheese
1 piece of toast
1/2 can of fruit
Salt & Pepper

My drink of choice was Apple Cider!! YUM!!

So it's pretty simple:...... scramble up 2 eggs, add the salsa, Salt and Pepper, top with cheese and let it melt. Toast up 1 or 2 pieces of toast and get 1/2 can of fruit in a bowl.

**You could also eat the egg mixture with corn or flour tortillas. Its super good!

Pork Chops. YUM!

I made this on last week and it was so delicious I knew I couldn't keep it from you all. So here it is....

Pork Chop with Mushroom Gravy

Ingredients (serves 2)

2 pork chops (thanks dad) pounded out thin (about 1/4 in thick)
Minced onion
Salt
Pepper
Italian Seasoning
Garlic

For Gravy:
3 Tablespoons Butter
3 Tablespoons Flour
1 small can of mushrooms
1.5-2 cups milk
Salt & Pepper
3 Tablespoon of Kraft's Salad Dressing Sizzling Salads Dinner Kit Sweet Roasted Garlic Balsamic

For Pork
1. I cut the bone off my pork chops and cut off most of the fat. Then flattened it to about 1/4 inch think.
2. On one side of the pork I shook over all the ingredients. Then add it to a greased pan on medium high heat. On the up side of the pork (with no seasonings yet) add just a little more salt and pepper.
3. Cook 5-7 mins on both sides

For Gravy
1. Drain mushroom and sauté them in a greased pan until cooked through. Then set aside outside of the pan.
2. Using the same pan melt butter. When it's completely melted add flour and mix.
3. When mixed add the salad dressing and 1/4 milk. Mix. You will see it will thicken up.
4. Keep adding milk, a little at a time, until it gets to a good gravy consistency. Then add mushrooms. Heat through.
**If you get it too runny add a little more flour.
5. Salt and Pepper to taste and then pour over Pork chops.

Side?
My side of choice that night was a baked potato.
1. Put potatoes in a microwavable safe bowl and add a little water (about 1/4 cup)
2. Cook in microwave on high for about 15 minutes.
3. If potatoes are not done cook for about 5 more minutes.
4. Top with your favorite toppings. I chose cheese and sour cream.

This meal is so simple I hope everyone tries it. And if you don't like mushrooms just omit them from the gravy and it's still delicious.

Breakfast Done Right

Start your mornings off right. Waking up 15 minutes earlier than you normally do can get you off on the right foot. Breakfast is really the most important meal of the day. It gets your energy up first thing in the morning and people who eat breakfast are healthier than people who don't. I know that we all have crazy busy lives and fast food is sometimes the easiest way to get food. In the end this is the worst choice you can make. There are so many calories and so much fat in those meal choices that we really can't afford to deal with. So wake up about 15 minutes earlier than you normally do, grab a pan, and start your morning right.

What I did this morning was fried 2 eggs over easy, toasted up a bagel and had half of a can of fruit.... and of course coffee with my favorite pumpkin spice creamer. It took about 5 minutes to make. See it's super easy and I feel great. Today will be a great day.

Ingredient of the Day: Zesty Italian Dressing

The first official ingredient of the day is: Zesty Italian Dressing. There are countless ways to use this to make a good meal, so what did I decide on?

All day today I couldn't stop thinking about the recipe Luke's cousin Michael made for us at their Grandma Judy's house. I knew I had some of the ingredients already and the one's I didn't would be under $5 at the store. Perfect!

The first time I ate this I was so happy. So today I will share it with you. (Thank Michael for this)

Zesty Italian Chicken and Pasta

Ingredients: Serves 3-4

1 pound boneless skinless chicken (I used thighs) cut into pieces
8 ounces Zesty Italian Dressing
3 tablespoons of Spicy Brown Mustard
Salt & Pepper
1 pound pasta (I used Rainbow Twists)
4 tablespoons butter/margarine
7.5 ounces Ricotta Cheese (I used low-fat Ricotta)

1. Preheat oven to 400 degrees F
2. Place chicken in a lightly greased 9x13 baking dish
3. In a bowl combine dressing, mustard, salt and pepper
4. Pour mixture over chicken
5. Cook for 45 mins
6. While the chicken is cooking cook pasta according to package directions
7. Drain pasta when done then add butter and ricotta to the pasta
8. When everything is done you can either put chicken over pasta or combine everything

Just an idea to make it healthier you could use whole wheat or whole grain pasta. If there is vegetable you absolutely love, ADD IT! This is your chance to make it your own. Be creative.

I don't know about you, but I'm the type of person that wants to eat homemade cooked meals. Since moving to go to school I began cooking dinner all the time (sometimes my boyfriend Luke makes dinner-LOVE him). We rarely eat out anymore and enjoy cooking for each other. Hopefully we can inspire you all to stay in more, cook dinner for yourself or your family, and maybe sometimes eat a little healthier.

The recipes that we cook are inspired by both of our mom's. (We love you guys). They have taught us the basics about everything we need to know. (Also we miss them cooking for us!!!) Posts will be up almost everyday sharing new ideas with everyone.
